Zucchini stuffed with Meat
Serves: 4 - 6
Preparation time: 1 3/4 hours
In Greece this dish is known as Kolokithakia Gemista Me Kima. You can serve it with roasted potatoes and cherry tomatoes. A wonderful main dish in the summer months, when zucchinis are plentiful.
There are a number of steps involved in preparing this dish, but the result is worth the work.
Ingredients:
- 4 medium sized zucchinis, about 1 kg (2 lbs)
- 5 tbsp (1/3 cup) uncooked plain white rice
- 125 gr (1/2 cup) finely chopped onions
- 1 garlic clove finely chopped
- 125gr (1/4 lbs) ground lamb or beef
- 1 teasp lemon rind (finely shredded)
- 125 gr (4oz) fresh chopped tomatoes
- pinch of cinnamon
- 1 tbsp finely chopped fresh dill or 1 teasp dried dill
- 2 tbsp fresh parsley, chopped
- 600ml (2 1/2 cups) chicken broth
- salt and pepper
- 1 tbsp olive oil to sautée onions
- 1 tbsp olive oil to brush baking dish
- 1 tbsp olive oil to brush zucchinis
For the Avgolemono sauce (optional):
- 1 tbsp lemon juice or to taste
- 1 egg beaten
